Steps:


1.Peel the sweet potatoes skin and cut into cubes.

2.In a pan add two tablespoon olive oil followed by bay leaves, cloves, cinnamon, and sweet potatoes saute well.

3.Now add corriander seeds,nutmeg power, ginger paste and fry well.

4.Add salt and stock water and cover well. Cooks till sweet potatoes become tender.

5.In a pestle and mortar, add saffron and warm water and grind well.

6.Once cooled, in a mixer add only cooked sweet potato (no water) to make a paste.

7.In an another bowl sieve the remaining stock and keep it aside.

8.Transfer the sweet potato paste into a saucepan and add the stock & mix well.

9.Now keep the soup on the flame and add the saffron water & stir well.

10.In a new pan, heat oil and add cumin seeds. When it is crackles remove from flame.

11.Transfer the soup into a small serving bowl and garnish with cumin seeds.

12.Serve hot.
